PSE was contracted to design and build a new skim milk concentrating process facility and secure FDA approval of the project. PSE was contracted as project management from start to finish on this project. The new process increased the client’s mozzarella cheese batch yields while reducing unwanted lactose content in the cheese. This process also helped the client increase its average batch yield from around 10.5 percent to over 16 percent.
